Butternut Squash Soup

A recipe for your MiiR Food Canister
1 tablespoon olive oil
6 cups peeled/chopped butternut squash (1 large squash)
3 cups chopped onion (approx. 2 medium sized onions)
2 pints vegetable broth
1 tsp. salt
1/2 tsp. garam masala
1/2 tsp. pepper
Heat the oil in a soup pot over medium heat
Add onion and sauté for approx. 10 min. or until tender
Add spices, stir, and let cook for 5 min.
After 5 min. add the squash, stir, and let cook for 10 min.
Add the vegetable broth
Bring to a boil, then reduce heat and simmer over medium heat until squash is soft
Use blender/immersion blender to purée soup
**Serve with your favorite baguette or crusty bread
